I’m looking into doing more to my 2016 SE. I would like to add a performance chip for added torque, HP, and MPG. Any suggestions?

On the other hand I want to find a cover for the engine like the STs but not wanting an ST one so I don’t look like a wannabe. Does anyone know a guy or place?

You'll need a custom tune, I don't believe there are any "chips" you can simply plug in. You can get a tuner and custom tune for $465 from Tom, but you'll need intake and exhaust to get any HP increase. The tune by itself will make the car feel faster and get better mpg, and if you have an automatic, it will help with the clutch shudder issue and shifting.

Some early Titanium's came with these:

I would call it very rare, I have only seen a few of them. Here's another example: https://cargur.us/x2z_H

Of the other 2,0L duratecs that have an engine cover, they either say ST, Ecoboost and/or Lincoln, aka all wannabe. If you want to modify one, if you get the Lincoln one, I think a nice gel badge or overlay would work. Should be pretty easy to measure and give to any of the companies that make decals and have it say Ford or Duratec: https://www.ebay.com/itm/2013-2016-Lincoln-MKZ-EcoBoost-Engine-Cover-2-0L/173188375426?hash=item2852d4e382:g:27YAAOSwf-RamErU

"Chips" are a marketing term from the 80's-90's --- They don't exist as anything other than scam garbage today.

FSWERKS is the common go-to source for performance parts.
