So let's say that in the process of installing a front strut tower brace, you have to "pull" the tops of your strut towers toward each other by a quarter inch or so to make it fit.

...won't this need an alignment, since you're torquing your strut towers...?

An alignment check is reasonable. Pulling he strut tower toward the center of the car by that much could change alignment settings (primarily camber). To ease installation, jack up one side of the car an then install the bar.

Jacking up one side (or both) will bend the top of the struts ever so slightly toward the center of the car. Its simple physics.... the car is, however, actually flexing more or less along its center line.... the towers themselves are not bending when you do this the whole chassis is. Its not much as most chassis designs are pretty stiff, but it could be enough to make a tight fitting bar fit easier. A chassis flexes more than one thinks. Jacking a car from the side more or less folds it toward the center (yes in minute amounts) but it does bend every so slightly.

Also, think of this in the reverse. Lets say the car is supported/balanced on a rail running down its center line (F to R). The weight outside this rail would pull the the sides of the structure downward and would conceivably spread the strut towers farther apart at the top.
