Does anyone know the what the stock exhaust diameter actually is? After looking around, i have seen numbers ranging from 2.1 to 2.5.

Correct. OD is consistent (2.5" exhaust pipe is always 2.5" OD) while the ID will vary based on wall thickness. Pipe is measured by ID and wall thickness dictates the OD.

With that said, the ST exhaust isn't a constant diameter. It is 2.5" off the downpipe through the resonator, necks to 2.25" over the rear subframe, and then exits the car as 2.5" again beginning before the rear muffler.

I can agree that our factory exhaust is not 2.5" I have replaced mine. Definitely smaller in most places. If you want a nice exhaust thats not super would I would get the ford racing catback which is 2.5" all the way or 3" MBPR which is what I'm running. Abit of drone at highway speeds going up hill but not bad at all.
