ipad 1 and my ford touch

so why is it that i cant select my music from my ipad instead of through mft? its pretty annoying.

when connected my ipad will say accessory connected or something to that matter when i open the music app and wont let me do anything besides go back to home screen.

It sounds like you're connecting your iPad via a USB cable. If that's the case, it goes into Accessory mode so MFT can take control of selecting the music. Apple lets 3rd party products take control of selecting music. If you don't want to do this, you have a few options:

1. Jailbreak and download add ons to keep it from going into accessory mode.
2. See if there is a way to keep MFT from taking control (I don't know if there is a setting for this, maybe look for a different thread with the answer).
3. Use bluetooth audio.
4. Use AUX in (mini jack cable).

What is this Jailbreak tweak that allows this? This is the first I have ever heard of it.

Not sure since I don't jailbreak. I found someone talking about while doing a quick google search, but I can't find it now.

You can also try holding the Home button for 6 seconds (from this thread)

Right, but simply jailbreaking it won't do this. I have my iphone jailbroken. You need to modify something to prevent this screen from showing up.

Try holding down the Home button for 6 seconds when it's in Accessory Mode. I tried mine out earlier today, plugged my iPhone into the USB slot, fired up iTunes, but it did not go into accessory mode. I could control audio via USB on both my iPhone AND MFT. I have iOS 7.1 (iPhone 4) if that helps.
