^This. A 180 degree thermostat does nothing for you without changing the operating parameters of the fan. It will open sooner than a 195, but engine temps will rise to normal without earlier fan intervention. Injected's tune does cover that.
The most beneficial aspect of the lower operating temps will be seen by those that live in hot climates. Higher temperatures will cause detonation/ping due to higher cylinder temps, and when the ECU senses it it will pull timing. Less timing equals less than optimal power, but with a lower temperature thermostat and earlier fan intervention it won't occur as early. This allows for more advanced timing resulting in more power, more complete combustion, and better engine efficiency. Outside of that, lower temperatures overall will assist in making additional power.
