anyone know what this is and what it does

It sets right between the inner coils. It has a black rubber boot. The wire goes to a small white plug. All I know is when I step on the gas it pops out and my car runs really bad. The coil packs and the wires are in the way when I took this picture. Please help I need to fix this before I go back to work on monday. Click image for larger version

Really shouldn't be popping out. It has nothing to do w/ the runablity, unless your motor is overheated. Try pushing it down. Or grab it very carefully & pull it up & then push it back down. The gromment is not going to be flat, its that way to keep water out of the sensor. Don't get it wet along w/ the plug connectors, they don't like water or moisture. Another look at your pix= thats the way its suppose to be.

I would also question the install of that junk yard engine.
Maybe, something is routed wrong and a wiring bundle is too tight. When the engine rocks under load the stress on the wire pulls it loose. ... which could also be a sign of a excessively worn motor/transmission mount.
