do our cars have different spark tables?

Like if we where to use 87 89 or 93 does the car switch spark tables etc.

Yes and no.
Yes there are multiple spark tables.
No it won't automatically adjust for different Octane levels. A tune is the only way to adjust for different Octane.

Your car is tuned from the factory to be able to run on 87 octane, BUT there are adders and multipliers in the stock tune that will help you take advantage from running higher octane.

I only read this on the FSWerks site but after the tune we strictly have to run the high grade from then on right? Unless we have it tuned for the 87

Correct after being tuned you will have to run higher octane fuel because of the agressiveness of the timing curve.
