gas mileage is backwards

so ive never got really good gas milage in my car. i have done stuff to decrease the mpg with my chip but have come to terms and dealt with it. so i avg right around 280-290 a tank but for some reason my car decided it wanted to get better mileage and got around 310 maybe a little more cus i had to refuel for a trip but this is the first time my car has ever seen those numbers on one tank. funny thing is that entire time i was driving back roads to work with a couple stops along the way. i understand why i was doing good on those roads but as soon as i get on to the high my car rolls through gas. if i do a lot of highway driving i get closer to 25ish mpg's. ive done all tune up stuff a what not and really not worried as ive dealt with it for a cple years now but why is my highway mileage so bad when i ease on to the highway and cruise at 70. i feel like i should be the other way around with city and highway. btw i have a 04 zetec with 136k

Are you driving at 70mph on the back roads? or slower.
If slower then i would say it is the steady higher RPM of doing 70mph which is killing your gas mileage.

back roads i hit no more then 55. you think that driving 70mph on the highway with the rpms being right at 3k it drains my gas that much. i feel like people get alot better mileage even when driving faster then that on the highway.
