Are you torqueing to specs? Usually Teflon tape is used on npt threads were the Teflon fills in the little gaps when tightened and seals. Might want to torque this badboy to specs.

It can be frustrating when crap keeps failing. I've finally made it to the point were nothing has broken in a while and I'm kinda feeling like, "maybe this is what a new car feels like"

Didn't use teflon tape this time, just relying on the o-ring. Afraid to torque it down anymore due to the last one breaking (unsure if I torqued it down to much or if it was a lemon part, don't want to spend another $25 on a third one). This car is worse luck than my Miata was...

I take it everyone is replacing their housing with this newer version due to leaks. My housing currently isn't leaking, so do I leave it alone or go ahead and change it anyways so it doesn't leave me stranded somewhere?

Just leave It as is. When my leaked it was a small slow leak. Just keep an eye on it to make sure you have enough coolant in it.

My sensor is leaking, again. I've tried 3 ways so far:

teflon tape on the threads
no teflon tape on the threads
thread sealant on the threads

I'm going to try once more with thread sealant, and replace the o-ring on the sensor...unless someone else has a better idea for me. I'm all ears...

Stop using German torque specs. I'd find out what the sensor needs to be torqued to at this stage.
