Well said frinesi2. The only thing I would add is that gasoline contains butane also, and the amount differs depending on summer/winter fuel mix. There is a higher proportion of butane in gasoline in winter to increase vapor pressure and, as a side note, is one reason prices tend to be lower that time of year.

I agree with your assessment of octane, timing and their effects on low rpm torque and fuel mileage. This is why I run 87 octane on long highway trips, but switch to a higher octane when the tank will be used for more city/stop-and-go driving--especially in the summer.

but doesn't the car take a 1-2 full tanks of gas to adjust for the octane change anyway? or is that a load of crap and it's much more dynamic than that?

I recently just changed from 87o to 93o premium gas (due to my new FSWERKS header) and yeah I did notice my mpg went up and my gas tank lasts me longer...

The latter--it's a load of crap. I can tell the car advances timing almost immediately after filling with higher octane fuel (especially E85). Watching the timing on my OBD2 app confirms this also.

Every few weeks or so, I will top off with Super when I am at 1/2 a tank. I'm not sure if it helps the car in any way but it makes me feel good, like I'm giving it a "treat".

I've always been a pessimist when it comes to using premium fuel if the car runs fine on regular but with the Focus my MPGs have been markedly better with premium and am running some experiments using 85 and then 91 and haven't concluded final numbers yet but so far it seems I'm getting almost 40 more miles a tank with premium and pretty much all city driving.
