So, keeping in mind that this engine will likely get a full-on build at some point in the future, you'd recommend keeping the compression stock?

Even with pulling some timing to avoid knocking, you don't think the bump in compression combined with cams would be advantageous? I could have swore that I read of people changing to the Zetec head gasket just for the compression increase on otherwise stock engines.
