Yes, you can use steam. As with anything, common sense takes precedence here. You wouldn't want to hold the steam head on ONE leather spot for a long time trying to get a stubborn stain out! Most people will wrap the head of the steamer with a microfiber and then gently work over the seat, following up with another microfiber to catch the water/dirt that the steam leaves behind.
Same thing applies to your plastic dash/door panels, don't hold the steam in one spot for very long.
