Remember, the SAE (label) viscosity tests stop at 212°. That is well below what your oil will run when on track.

Most modern vehicles have a cooling system that runs at 190 deg. F.+ and the engine temperatures are far greater than 212 deg. F., especially on the cylinder walls.
