As I recall, the ST Performance Academy also limited your gearing. It wasn't really an all-out performance challenge on a track. More like a marketing event in a parking lot. (Not that that's not a reason to go, given that cars weren't available at the dealer.)
There's a Ford Racing High Performance Driving School
There are lots of commercial outfits, somewhat dependent on where you live, often specializing in particular makes of car.
And then there are places that teach you about various sorts of special purpose race cars (dragsters, Formula, karts, etc., as opposed to street cars).
