Been researching again, found some seat heater kits that run $37.50 per seat (each kit comes with 1 backrest and 1 bottom heating element), so you could do the entire backseat for $75.

Only issue I can think of is that these heating kits come with their own 3-position switch (hi/lo/off), so you couldn't use the modified defogger switch (2-position, on/off) like I was hoping. Still like the idea of a cutoff relay for when the car turns off. Grrrr
