Yellow is easier for the human eye to see than blue is, also yellow lights produce less glare meaning they are better for inclimate weather conditions like rain, snow, and fog. The common misconception is that yellow lights penetrate the fog better, which they don't.
And as you've mention the reason for yellow shooting range glasses and the like are to help improve contrast. I have a pair of yellow tinted glasses I wear during poor weather conditions and when sitting at the computer for long periods of time (it helps reduce glare even with a properly adjusted monitor).
