I always shut the bleeder valve "before" the pedal reaches bottom (and while fluid is still coming out). This eliminates any possibility of air being allowed back in the system. I also bleed each corner one more time after air bubbles have totally disappeared.
I feel the same way about brake bleeding. I thought it was just me being anal about bleeding my brakes. Plus I make sure to use only a new bottle of brake fluid so I either get two small bottles or a large bottle of brake. I do this every two years or when I put new pads on.
