I understand the manual shift (with the plus and minus keys).. just not the purpose of the standard S.

S automatic locks the transmission out of 6th gear and is more aggressive in downshifting and holding gears, where as D uses all six forward ratios all the time.
If you want to shift into 6th in regular S hit the plus toggle on the select shift lever to put the car into S manual mode and lock the car into 6th gear unless you accelerate too aggressively or slow down too much.
