Nice car, and welcome to the forum. First thing I would do is search the MK2 forum for any mod you are thinking about doing. As someone has probably done a write up about it and there will definetly be opinions on the best products.
I myself have done very little as well. I have put in an Airaid Cold air intake (I call it that because it uses the OEM black forced air tube). I also have debadged the trunk and put a sticker over the Ford emblem on the front, back, and steering wheel.
