Insurance companies don't bother with selling parts. It's not their area of expertise. They simply sell what's left of the vehicle at auction. Some insurance companies run their own salvage auctions (AAA in Southern California for one...), while most contract with major salvage auction firms like Co-Part or Insurance Auto Auctions.
In the case of your SVT, it's not going to bring a whole lot of money, since a lot of the high-dollar stuff was damaged. Mostly the doors, rear hatch, some wheels, and a nice rear-disc axle.....
