Auto ISO is an option that you can turn off.

Thanks for the tips! I try to set the ISO as low as I can but it seems like even in full manual mode the camera sets to auto ISO. I set it to 800, and if the light is too low it automatically jumps to 1600. I gotta play with it and see if I can shut that off.

1600 ISO can be dropped to 800 ISO but, you loose a stop of light so you will want to got to a 16sec shutter to gain that light back. You will see less noise then.

When shooting static objects in the dark, there is no reason to not be at the lowest ISO native ISO setting you can use then, make up for the lack of light with a slower shutter speed.
