Traction control can be switchable off on an S model.. but...
To do so, you have to swap the guage cluster and airbag from an SE with the airbag switches. There is a write up on how to do it on this forum but too lazy to hunt it down now. This will also provide "MyKey" and the possibility of Hill Start Assist on the "S" if you enable those features in the BCM with FoCCCus. This is also a great time to add factory cruise to your S as long as you have it apart.

Yanking the appropriate fuse in an emergency is std. for any vehicle so equipped, done it with 18 Wheelers when necessary to get unstuck.
Driving without the gadgets is like driving ANY older car without them.

I'm resurrecting this thread, because I have a cheapskate "S" model and think this is a very relevant subject matter that is worth re-hashing.
So, to recap (for those of you who don't have time to read through all the posts), the base "S" model has no native way to disable traction control — ergo no way to allow for a bit of excess wheel spin to get unstuck in extreme snow conditions.
@MetalMuffins, that is one cool idea you have there!
Question: how does the car react when you yank fuse F19 and ABS/ESC/TSC/Torque Vectoring are all turned off? Does it give you all sorts of angry idiot lights? Most importantly, how does the car handle when driving in snow after the fuse has been yanked out? I take it that this is an effective way to regain driver-control over your wheel spin, to the extent that the differential will allow?
My idea is: if I ever get stuck somewhere on my mile-long unpaved driveway in the snow, just get out of the car, yank fuse F19 and try to run with it. Would this idea work? I'd rather try this than bother rigging up a switch and have to worry about the wrath of the insurance adjuster...

Wow, so you can't even turn it off in the S?
That's pretty mindblowing. We got stuck a few times so far this winter in the Focus... only thing that got us out was disabling the TC through the stupid menu system. 15" of snow + TC = fail.
I would caution those who are hardwiring anything that could disable your ABS. I hate ABS with a firey passion but hardwiring a way to disable it will almost guarantee that you are denied insurance coverage if you ever get into an accident. On my Subaru I just pulled the fuse, which worked fine on that car since you could just plug it back in. The MK3 is obviously more complicated.
