The paint code from the VIN tag will give the shop the formula to mix the same color. But it is still different paint. It you took two of the same cars, same color with different production dates and swapped body parts (a fender or a door) there is a good chance that a visible difference in the color tint would exist.
It is not a bad idea to after mixing the paint to spray a test panel and match it to the existing paint on the vehicle. The paint shop is just trying to insure the customer gets a good product that they will be satisfied with. To advise someone not to comply with the shops request it really not being very helpful.
But to ask the customer to remove a part of the car is also not being very helpful. We have specialized body shops, collision repair shops, and mechanics for a reason. If everyone was so good with a wrench and knew exactly how to do these things, we wouldn't need these shops. A body shop should have workers competent enough to remove the door themselves or just use the whole car as a reference to match the paint, or use a specific area to match the area they're painting, and be competent enough to blend it where it meets another panel with slightly off color.
Note that I say *SHOULD* as Fine Line Collision here in Vero Beach, FL couldn't get my last car right after 4 tries.
