You have several problems let me see if I got this straight.

Blower will not work on any settings, or will not work on speed #4: You need a new fan control switch if the blower works on 1, 2, and 3. If the blower doesn't work on any speed, you should check the blower motor before replacing the switch. The blower motor itself might be bad.

AC comes on DEF vent setting: this is normal. The AC will come on whether the light comes on or not. This is because refrigeration systems pull moisture of the the air, and dry air on the inside of the windshield will clear fog faster than wet air at any temp. The AC also comes on when set to the DEF/FLR setting.

Car overheats at slow speeds or stopped with engine running, but cools off quickly when the AC is on: That is the engine cooling fan resistor that is the problem. Since you have a Zetec, it is also possible that the pigtail to the cooling fan resistor is also damaged. You should inspect both of these. The chance that these are damaged is more likely if the exhaust heat shield is removed, or a header is installed but not wrapped.

No heat: that could be multiple things. You should check your coolant level. I doubt it is a thermostat stuck open because I doubt it would overheat if it was stuck open. I'd fix this last. What you might end up having to do is drain the coolant, disconnect both heater hoses from the engine, then force water through the heater hoses until the water runs clear. I would force water through one direction, then put your water hose up to the other heater hose to force it through the opposite direction. You'll also want to keep an eye out on the floor under the passenger side to see if water is leaking from the air system. That would indicate a hole in the heater core. It might not be seeping through now because so much rust is clogging up the lower part of the heater core. Hopefully you'll force water through- see a chunk of crud come out, and not have any water on the floor inside the car.
Be eclectic.
