Insurance companies go by the book value of the car. Generally if the damage is less than 2/3 the value of the car they will fix it. As it seems that the airbags did not deploy, the damage is limited to structure and cosmetics.
I sell OEM "crash" parts , including Ford, to body shops for a living. The structure that you do not see will generally not try to be straightened but replaced. Over the years I have sold many rear floor pans. rails, rear body panels, suspension parts and unisides for vehicles hit like this. With today's technology this car can be repaired to "as new" condition. I would not be surprised to see it repaired by the insurance company.

You only needed gap insurance if you didn't put more than 50% down up front, otherwise they don't tend to push it even if you finance a smaller portion of the purchase price of the car. You might still want it just to cover your back.

Well, I live in a quiet neighborhood and my street has a cul de sac at each end, and a speed limit of 25. I have no idea why anyone would even come down here unless they live here. I am no where near a main road, deep residential. I talked to the bodyshop yesterday, I have it at the Ford dealer I work at, he said he thinks about 4500 alone to fix the suspension and then the body parts/labor on top of that. I won't know til Monday or Tuesday when the adjuster from State Farm shows up. Now its just a waiting game. driving this for now. Rental car.
