Does anyone have any recommendation on spark plugs as well? Might as well do them while I'm under the hood.

If you want to do the 10K interval I would probably use the Mobile 1 like you have been doing. The motorcraft semi-syn blend is good oil and it is cheap, that is why I use it.
I do 5K intervals on Synthetic. Before I switched to Synthetic on my truck, I use to do 3K on Conventional oil.

I have almost 42K so that's kind of the reason why I use it. But I actually don't use SeaFoam. I use something called Mopar Combustion Chamber Cleaner. (MCCC) You spray it right into your intake vs putting it into your oil/gas.

10K is a bit extreme to me. But I generally check my oil about every week to see what it looks like. 5K is generally the sweet spot of when it needs to be due.
