I don't know what your numbers are, but if your gap is to big, you can grind the valve and seat to raise the valve up and close the gap so you can use the closest bucket size, but not if it's going to require to much grinding. Conversely, if the gap is to small, you can take a little off the stem to increase it.
My machine shop looked over my numbers and recommend against it as it would have left the valve faces and seats on the thin side.
Another option I considered was (if you know a machinist) to take the next size bucket and machine the stem inside the bucket to the size you need. As I needed to do all but 2 of them, I just got new ones.
