Had this same issue - brake level fluid would just pop on randomly. The brakes felt absolutely fine.
Took it to the dealer, they drove it and got it to come on. The explanation I got was that it was probably delivered with barely enough fluid in it to keep it from putting the light on, and that as my pads had worn it would now take more fluid to cause the caliper to close enough to contact the rotor (makes sense). They checked the entire brake system to make sure, and said everything was fine.
They topped off the fluid for free, haven't had a light since.
