If you could remote start your car and be on your way and a carjacker happened to be waiting for you to get in the car, he could easily run and steal the car right before your eyes if it left the engine running and the car on. The fact that when the door is opened or the brake depressed the engine then again dies is most likely a safety precaution to avoid that very scenario.
I've never had a car with remote start that died when you opened a door.
On every other car I've owned with remote start, if the carjacker got into the car with it running like in the above scenario and the key wasn't in the car, it would die the moment they stepped on the brake.
